Updated June 2026

A handcrafted wooden cutting board or charcuterie board is built to provide years of beauty and functionality when properly cared for. Whether you use your board daily in the kitchen or reserve it for entertaining guests, a few simple maintenance habits will help protect the wood and keep it looking its best.

Before First Use

Your BonoBuilt board arrives ready to use and fully conditioned.

Every BonoBuilt cutting board and charcuterie board is finished with a blend of food-contact-safe fractionated coconut oil and beeswax. This combination helps nourish the wood, enhance its natural beauty, and provide moisture resistance while remaining easy to maintain.

Fractionated coconut oil is a highly stable form of coconut oil that remains liquid at room temperature and is commonly chosen for wood products because it offers many of the benefits people seek from natural oils without the rancidity concerns associated with many cooking oils. Beeswax adds an additional layer of moisture resistance and helps create a smooth, pleasant feel.

No additional preparation is required before using your board.

Cleaning Your Board

After use, wash your board with warm water, mild dish soap, and a soft sponge or cloth.

Dry the board immediately with a towel and allow it to air dry completely before storing.

Avoid:

  • Leaving the board soaking in water
  • Putting the board in the dishwasher
  • Using harsh chemicals or bleach
  • Storing the board while still wet

Excessive moisture is one of the leading causes of warping, cracking, and premature wear.

Conditioning Your Board

Wood naturally expands and contracts with changes in moisture. Periodic conditioning helps replenish the wood and maintain its appearance.

To maintain your board, we recommend using a food-contact-safe board conditioner made from fractionated coconut oil and beeswax. Food-grade mineral oil and beeswax products are also commonly used and remain a widely accepted option for cutting board maintenance.

Avoid using cooking oils such as olive oil, canola oil, vegetable oil, grapeseed oil, or avocado oil, as these oils can oxidize over time and may develop unpleasant odors.

How Often Should You Condition Your Board?

The frequency depends on use and climate, but a good rule of thumb is:

  • Heavy use: Every 2–4 weeks
  • Moderate use: Every 1–2 months
  • Occasional use: As needed when the wood appears dry

If the board begins to look dull, faded, or dry, it’s time for another application.

How to Apply Board Conditioner

  1. Ensure the board is clean and completely dry.
  2. Apply a small amount of conditioner to all surfaces of the board.
  3. Spread evenly with a clean cloth.
  4. Allow the conditioner to soak in for several hours or overnight.
  5. Buff away any excess with a clean cloth.

Removing Odors

Wood naturally resists many odors, but strong-smelling foods such as onions, garlic, or fish can occasionally leave lingering scents.

To freshen your board:

  1. Sprinkle coarse salt across the surface.
  2. Rub gently with half a lemon.
  3. Let sit for a few minutes.
  4. Rinse and dry thoroughly.

This can help remove odors and freshen the surface without harsh chemicals.

Preventing Cracks and Warping

To maximize the life of your board:

  • Keep it away from prolonged standing water.
  • Avoid exposing it to extreme heat.
  • Do not place it in the dishwasher.
  • Store it in a dry location with airflow around the board.
  • Condition it regularly.

Wood is a natural material and minor seasonal movement is normal, but proper care significantly reduces the likelihood of cracking or warping.

Frequently Asked Questions

Can I use olive oil on my cutting board?

No. While olive oil is food-safe, it is generally not recommended for cutting boards because it can oxidize over time and develop unpleasant odors.

What is fractionated coconut oil?

Fractionated coconut oil is a refined form of coconut oil that remains liquid at room temperature. It is highly stable and commonly used in personal care products, soaps, and wood conditioners.

Is mineral oil safe for cutting boards?

Food-grade mineral oil is widely used for cutting boards and is considered safe for food-contact surfaces. However, it is petroleum-derived, which leads some consumers to prefer plant-derived alternatives.

How often should I oil my cutting board?

Most boards benefit from conditioning every few weeks to every few months depending on use, climate, and washing frequency. If the wood begins to look dry or dull, it is usually time for another application.

Can a dry cutting board be restored?

In many cases, yes. Dry or neglected boards can often be restored through cleaning, sanding, and refinishing. If you have questions about restoring a BonoBuilt board, please contact us through our website.
